So weirdly enough that remove button in the Mining submenu only works on constructed tiles (like made of wood, stone, etc by hand), and even then, doesn't seem to work most of the times I've needed it. The one you want is the Eraser on the main toolbar, that will remove mining designations and most other things. Slopes can be vulnerabilities in your fortress, and of course you just gotta know how to deconstruct things. A two for one deal! And it's still super short.

Ramping turns the tile's block into a ramp (leaving the base) and removes both the base and block of the tile on Zed level above.
